Herb Crusted Rack of Lamb

This is Gordon Ramsey’s recipe and it turned out better than I could have expected for my first time making rack of lamb. It was tender and juicy, and the herb crust gave it a wonderful earthy flavor. 
At the time I made this, I wasn’t on a keto diet. However, this recipe is that good that I wanted to post this not only to share Ramsey’s recipe, but to also show that by simply substituting cauliflower instead of mashed potatoes, this would be a fantastic Keto meal.

Here’s the rack of lamb that I bought from Sprouts. This is pretty typical to find rack of lamb like this at your local grocery store. Sprouts was running a special at the time and if I recall, I only paid $13.00 for this slab of meat. Anytime there’s a special on meat that’s normally more expensive and of great quality, I always try to snag it! 

What I love about this recipe is the herb crust. It’s packed with flavor. So be sure to only use fresh herbs in this. The herbs really balance out any ‘barnyard’ tones that might come through in the meat. But again, since rack of lamb is a higher quality cut, there really shouldn’t be any barnyard funkiness at all.
